Collard Green Omelette
Ingredients
3 large eggs
2-3 collard green leaves, stems
removed, finely chopped
2 tablespoons olive oil or butter
¼ small onion, diced (optional)
2 cloves garlic, minced
Salt and pepper to taste
¼ cup shredded cheese (optional)
Instructions
1.Wash collard greens thoroughly and remove thick stems. Chop leaves finely.
2.If using protein toppings, cook them first and set aside.
3.Heat 1 tablespoon oil in a non-stick pan over medium heat. Sauté collard greens
(and onion if using) for 3-4 minutes until wilted and tender. Add garlic and
cook 1 more minute. Season with salt and pepper. Remove from pan and set
aside.
4.Beat eggs in a bowl with salt and pepper.
5.Heat remaining oil in the same pan over medium-low heat. Pour in beaten eggs.
6.As eggs begin to set, gently pull edges toward center, tilting pan to let uncooked
egg flow underneath.
7.When eggs are almost set but still slightly wet on top, add collard green mixture
and your choice of protein to one half of the omelette.
8.Add cheese if using, then fold omelette in half. Slide onto plate and serve
immediately.
