Roasted Radish with Honey, Lemon & Chili

Ingredients

  • 2 lbs radishes (any variety), trimmed and halved (or quartered if large)

  • 3 tablespoons olive oil

  • 2 tablespoons honey

  • 2 tablespoons fresh lemon juice

  • 1 teaspoon lemon zest

  • ½ teaspoon red chili flakes (or to taste)

  • Salt and pepper to taste

  • Fresh herbs of choice for garnish (parsley, chives, cilantro, dill, or any preferred herbs)

Instructions

1.Preheat oven to 425°F. Line a baking sheet with parchment paper.

2.In a large bowl, whisk together olive oil, honey, lemon juice, lemon zest, chili flakes, salt, and pepper.

3.Add halved radishes to the bowl and toss well to coat evenly with the honey-lemon mixture.

4.Spread radishes in a single layer on the prepared baking sheet.

5.Roast for 20-25 minutes, stirring once halfway through, until radishes are tender and lightly caramelized.

6.Remove from oven and garnish with fresh herbs of choice. Serve immediately as a side dish.
