Turnip Eggplant Mash

Ingredients

  • 2 large turnips, peeled and cubed

  • 1 large eggplant, peeled and cubed

  • 3 cloves garlic, minced

  • 3 tablespoons olive oil or butter

  • ¼ cup milk of choice: regular milk, cream, oat milk, coconut milk, etc. (optional)

  • Salt and pepper to taste

  • 1 tablespoon fresh herbs (thyme, rosemary, or parsley)

  • ¼ cup any cheese of choice (optional, for extra creaminess)

Instructions

1.Preheat oven to 400°F. Toss cubed turnips and eggplant with 2 tablespoons olive oil, salt, and pepper.

2.Roast vegetables on a baking sheet for 30-35 minutes until tender and lightly caramelized.

3.Transfer roasted vegetables to a large bowl. Add minced garlic and remaining olive oil.

4.Mash with a potato masher or fork until desired consistency is reached. For smoother texture, add your choice of milk gradually.

5.Stir in cheese if using for extra creaminess. Season with salt, pepper, and fresh herbs. Serve hot as a side dish.
