Roasted Jalapeño Basil Dressing

Ingredients

  • 4 roasted, peeled, and seeded jalapeños (or poblano peppers)

  • 1 cup packed basil leaves

  • 3 cups olive oil (or avocado oil) total

  • 1 cup white wine vinegar

  • Zest of 1 orange (use peeler)

  • 1 Fresh orange- juice (squeezed from zested orange)

  • 1-2 tsp honey (to taste)

  • Cilantro (optional)

  • Salt and pepper to taste (1-1.5 Tbsp)

Instructions

  1. Puree jalapeños, basil, vinegar, orange zest, orange juice, and honey with stick blender

  2. Slowly drizzle in olive oil while blending to emulsify

  3. Add cilantro if using

  4. Season with salt and pepper to taste

  5. Label and date

  6. Store in refrigerator up to 3 days

Chef's Notes:

Poblano peppers give a milder, smokier flavor than jalapeños. Fresh OJ and honey balance the heat perfectly. Add oil slowly for best emulsion.
