Veg Ceviche (Ceviche-inspired)

Ingredients

  • 2 cups cauliflower florets, very finely chopped

  • 1 cup kohlrabi, small dice

  • 1/2 cup red onion, finely diced

  • 1/2 cup cilantro, chopped

  • 1 cup tomatoes, small dice

  • 1 cup cucumber, small dice

  • 1/2 cup lime juice

  • 2 tbsp olive oil or avocado oil

  • 1 tsp sea salt, plus more to taste

  • 1/4 tsp black pepper

  • 1/2 tsp ground cumin

Instructions

1.If using hard-boiled eggs: boil eggs for 10–12 minutes, then cool, peel, chop, and set aside.

2.Chop everything very small. Aim for a fine dice (about 1/8 inch). Cauliflower should be chopped to a rice-like texture.

3.Tip: You can use a food processor to speed this up—pulse cauliflower, kohlrabi, and cucumber in short bursts (don’t purée).

4.In a bowl, combine cauliflower, kohlrabi, cucumber, tomatoes, red onion, cilantro, and jalapeño (if using).

5.In a small bowl, whisk lime juice, oil, salt, pepper, and cumin.

6.Pour the marinade over the veggies and toss well.

7.Cover and let marinate 15 minutes (or up to 1 hour) to soften and absorb flavor.

8.Check for texture: the vegetables should still feel fresh and crisp, but slightly softened from the marinade. They should not be mushy.

9.If using shrimp: Stir it in right before serving.

10.If using eggs: Stir in (or sprinkle on top) right before serving.

11.Taste and adjust salt or lime juice.
