Winter Squash “Guac” Bowl (Chunky Mash)

Ingredients

  • 4 cups winter squash (butternut/kabocha/delicata), peeled if needed, cut into 1-inch cubes

  • 2 tbsp olive oil or avocado oil

  • 1 tsp sea salt, plus more to taste

  • 1/4 tsp black pepper

  • 1/2 cup tomato, finely diced (about 1 small tomato)

  • 1/2 tsp ground cumin (optional)

  • 2 tbsp lime juice

  • 1/2 cup chopped cilantro

  • 1/4 cup red onion, finely diced (optional)

Instructions

1.Heat oven to 425°F. Toss squash cubes with oil, salt, pepper, and cumin (if using).

2.Spread on a sheet pan and roast 20–25 minutes, flipping once carefully flipping/stirring once halfway through, until very tender and browned on edges.

3.Transfer squash to a bowl. Mash lightly with a fork until chunky, leaving some small pieces (do not mash until smooth)

4.Stir in lime juice, cilantro, and red onion (if using). Add chile en polvo/jalapeño if using.

5.Taste and add more salt or lime juice if needed.
