Japanese Ginger Carrot Dressing

Ingredients

  • 5 medium carrots, finely chopped

  • 1¼ onions, roughly chopped

  • 2½ thumb-sized pieces of fresh ginger (or 5 tsp grated)

  • 15 tbsp avocado oil (just under 1 cup)

  • 5 tbsp sesame oil

  • 5 tbsp soy sauce

  • 5 tbsp rice vinegar or apple cider vinegar

  • 1 tbsp + 2 tsp honey

  • ¼ tsp sea salt

  • 5–10 tbsp filtered water, as needed to thin

Instructions

  • Prep your ingredients. Peel and roughly chop the carrots and onion into small pieces so your blender can process them easily. Peel the ginger by scraping off the skin with a spoon, then grate or roughly chop it.

  • Add everything to the blender. Place the carrots, onion, ginger, avocado oil, sesame oil, soy sauce, rice vinegar, honey, and sea salt into a blender.

  • Blend until smooth. Start on low speed then increase to high. Blend for about 1–2 minutes until the dressing is completely smooth and creamy with no chunks remaining.

  • Adjust consistency. If the dressing feels too thick, add filtered water one tablespoon at a time and blend again until you reach your desired consistency.

  • Taste and adjust. Dip a spoon in and taste. Season as needed.

  • Serve. Drizzle generously over the Skin Glow Rainbow Salad or any other salad and toss to coat evenly.

💡 For more acidity, add additional vinegar to taste. For more sweetness, add additional honey to taste.
